You’ll be responsible for managing the service and sales of wine and beverages in the restaurant, veranda café, wine cellar operation and, at certain times, the main show lounge. Ensuring that all wine and beverage sales forecasted are met is key to your role, combined with providing expert recommendations and recording guests’ comments. Your aim is to promote and maximise sales, including the Seabourn Vintage program.

Training and educating all staff involved in sales and the service of wine products is part of your remit, as well as carrying out regular meetings with the Public Room Manager and Maitre D’Hotel ensuring that they are up to speed with daily dinner wine recommendations. You will also need to update sales records and produce reports on a regular basis.

Educated to diploma/degree level or equivalent, you’ll have worked as a Sommelier in a fast-paced 4 or 5 star establishment, catering to an international clientele, as well as experience in a supervisory role in a restaurant environment. Your experience will cover premium and super premium wines and other beverages, with practical knowledge of operations, procedures and regulations. You’ll have the ability to convince, inspire and where appropriate to up-sell, working in a team that’s focused both on generating revenue and exceeding guest expectations. A strong command of English is essential, with good written and verbal communication.
